The Beech Wood Gnocchi Board is a traditional design used for one of the steps in preparing gnocchi, small Italian dumplings made from potatoes, eggs and flour. The board has a handle and a grooved surface so you can tilt the board and roll the small balls of dough down the surface to “etch” them, as you use your thumb to create a slightly hollow center in the dumpling. The etch marks on the gnocchi enable sauces to cling better to the dumplings when serving.
In Medieval times, gnocchi were symbolic of opulence: soft, aromatic and well-seasoned, they were on every festivity’s menu. Original recipes did not include potatoes but were later incorporated in the 16th century, when the root vegetable was introduced to Europe.
