Berkel Red Volano B2 Meat Slicer
Description
Used in MoMA’s Cafe 2, this machine was conceived by Dutch butcher Wilhelmus Adrianus Van Berkel in 1898 and is the first meat slicer in history, engineered to produce perfect slices of prosciutto, pancetta, salumi and more. Van Berkel’s breakthrough arrived after years of studying the movement of hand slicing meats with a knife which he was able to seamlessly mimic with a concave blade rotated by a hand-powered crank. Made in the Italy, this compact aluminum and stainless steel machine features a hand-operated wheel, built-in sharpener and slice-thickness adjustment system. No electricity is needed to operate this machine.

Features include:

• The Volano B2 has a 100cr6 steel blade with a 10.4” diameter and a 6” round cutting capacity
• Cuts meat in super-thin slices
• The concave shape of the blades touches meat only at the cutting point, preventing any alteration in taste and scent
